Morongo Casino Resort & Spa Introduces New Cuisine, Affordable Fine Dining At Cielo

Cabazon, California (December 10, 2008) – Well-known for its breathtaking views of the Coachella Valley, Cielo further elevates its dining experience with the introduction of a new, dynamic menu created by Chef Victor Jaurez, bringing affordable fine dining to Morongo.

“I have refined the menu in a way that maintains food quality while making fine dining affordable for our guests,” said Chef Jaurez. “I’ve had a lot of fun incorporating new concepts that appeal to a wide range of tastes.”

Alongside menu mainstays like delicious seafood, juicy steaks, and contemporary fare is an entirely new array of pasta dishes such as “Penne Pasta Carbonara” with cream sauce, pancetta and fresh peas; “Cappelini Fra Diablo” with vine ripe tomato, crushed chilies and finished with basil; “Linguini with Clams”; and “Seafood Parpardelle” with prawns, clams, calamari and fresh spinach in a light cream sauce.

Chef Jaurez also introduces a variety of interesting new first course dishes including “Crispy Calamari” served with spicy tomato sauce and citrus aioli; “Stuffed Portobello Mushroom” filled with crab, spinach and parmesan cheese; “Grilled Artichoke” baked with spinach and parmesan cheese, served with marinara sauce; “Eastern Lump Meat Crab Cakes” served with cucumber salad and spicy rumoulade sauce; “Ahi Tuna Tartar” with caper and lemon, and “Beef Carpaccio”.

Located on the 27th floor, Cielo is set aglow with stunning chandeliers that slowly change colors throughout the evening to echo the brilliant oranges, blues, purples and gold’s of the nightly sunset behind the mountains.
